Tomato Sausage Pasta

Full of flavour and a budget saver.

INGREDIENTS

  • 150g dry weight pasta

  • 4 cloves of garlic, thinly sliced

  • 1 Tbsp olive oil

  • 2 sausages, peeled

  • 125g beef mince

  • 1 tsp smoked paprika

  • Salt and pepper, to taste

  • 200g can of tomatoes

  • 1/2 c basil

  • 1 c baby kale

METHOD

  1. Put a pot of water on the boil and salt to taste. Once boiling, add the pasta and cook as per the packet instructions.

  2. Heat a pan to a medium high heat. Add oil and garlic, and fry for one minute.

  3. Add the sausage and mince, and cook until brown. Add paprika and season with salt and pepper.

  4. Add tomatoes and cook for two to three minutes to reduce, before adding the kale and 2-3 T of the cooking water from the pasta.

  5. When the pasta is al dente, drain, and add to the pan with an additional 3T of cooking water. Reduce.

  6. Top with the chopped basil and season to your liking.
