Orange & Ginger Granola

Crunchy. Toasted. Moreish.

INGREDIENTS

  • 2 cups quick oats

  • 2 cups wholegrain oats

  • 1/4 of sunflower seeds

  • 2 Tbsp sesame seeds

  • 3/4 cup shredded coconut

  • 3/4 cup nuts (e.g. cashews, walnuts, almonds, etc. Use any or a mix of raw nuts!)

  • 1 Tbsp cocoa

  • 3 tsp cinnamon

  • 2 oranges, both zest and juice

  • 1/4 cup of oil (e.g. coconut oil, butter, vegetable oil, etc.)

  • 1/4 cup of sugar (e.g. honey, maple syrup, brown sugar, etc.)

  • 3 tsp fresh ginger, grated

  • 1 tsp salt

METHOD

  1. Preheat oven to 160 degrees.

  2. In a large mixing bowl, add the first eight ingredients and mix until well combined.

  3. In a separate bowl, mix together orange (both zest and juice), oil, maple syrup, ginger, and salt.

  4. Pour the wet ingredients into the dry ingredients and mix well.

  5. Line a tray with baking paper and spread the mixture out evenly (you might need two trays depending on the size).

  6. Bake for 30-45 minutes until golden, stirring regularly.

Granola makes 14 serves - roughly 50g per serve.

Serve with 200g Anchor plain protein plus yoghurt, 15g protein powder, and 120g any fruit. Mix the protein powder into the yoghurt before adding the granola. This will give you the following:
