Breakfast Sandwich

This sandwich has the ability to make your day if you get all of the components right. Crusty bread, melted cheese, tangy sauce.

INGREDIENTS

  • 2 sausages

  • 6 egg whites

  • 2 tsp soy sauce

  • 40g Edam cheese

  • 1 cup kale

  • 2 buns

Sauce

  • 2 Tbsp natural yoghurt

  • 1 tsp Dijion mustard

  • Siracha, to taste

  • Pinch of smoked paprika

METHOD

  1. Take the sausages out of their casing, roll into balls, then squash into patties. Set aside.

  2. In a frying pan, cook the patties until well done. Leaving them in the pan, top with cheese and cover with a pot lid until the cheese is melted. Set aside.

  3. Separate the eggs. Into the egg whites whisk with the soy sauce.

  4. On a medium heat, scrambled the egg whites. Set aside.

  5. Toast the buns.

  6. While the buns are toasting, mix the sauce ingredients together.

  7. Assemble.

Serves two.
