Sticky Chicken Drumsticks

“It’s finger lickin’, it’s finger lickin’ good, y’all!”

INGREDIENTS

  • 6 chicken drumsticks

  • 3/4 tsp baking powder

  • 3/4 tsp salt

  • 2 Tbsp soy sauce

  • 2 Tbsp rice wine vinegar

  • 2 Tbsp stock

  • 1 tsp honey

  • 1 tsp chilli oil

  • 1 Tbsp sesame seeds

  • 2 spring onions, finely sliced

METHOD

  1. Preheat oven to 120 degrees fan bake.

  2. Using a paper towel, pat the drumsticks dry to remove as much moisture as possible. Add to a bowl.

  3. Sprinkle with the baking powder and salt, and mix to combine. This will help to get the skin crunchy.

  4. Place on a pre-oiled oven rack and cook for 30 minutes.

  5. While the chicken is cooking, mix together the sauce. In a small bowl add soy, vinegar, stock, honey, and chill oil. Set aside.

  6. When the chicken has been cooking for 30 minutes, turn the oven up to 200 degrees and cook for a further 45 minutes.

  7. Just before the chicken is finished cooking, heat a medium pan and reduce your sauce. Once at the desired, sticky consistency add the chicken and mix well.

  8. Serve topped with sesame seeds and spring onions.
