Microwave Chicken Pho

A dish with a depth of flavour I didn’t know possible using a microwave.

INGREDIENTS

  • Cooked chicken bones

  • 750ml chicken stock

  • 3 slices of ginger

  • 2 cloves of garlic, sliced

  • 2 spring onions, the green part sliced and the white in 3cm pieces

  • 1 shallot, roughly chopped

  • 1 cinnamon stick

  • 1 Tbsp fish sauce

  • 1 tsp lime juice

  • Salt, to taste

  • 100g dry rice noodles

  • 1 carrot, julienned

  • 1/2 c basil, roughly chopped

  • 300g leftover chicken, shredded

METHOD

  1. In a non-stick pan, brown the ginger, garlic, the white of the spring onion, shallot, and the cinnamon stick. This step will take roughly 2-3 minutes.

  2. In a microwave bowl large enough to hold 3L add the chicken bones and stock, then add the aromatics that you have just browned in the pan. Cook in the microwave for 10 minutes.

  3. While this is cooking, prepare the rice noodles as per the packet instruction. Set aside.

  4. Remove the microwave broth and season with fish sauce, lime, and salt.

  5. Divide the broth between two bowls and start to build your meal by adding the rice noodles, carrot, basil, and top with leftover chicken.
