Sticky Date Porridge

A warm comforting hug in every spoonful!

INGREDIENTS

  • 80g oats

  • 1/8 tsp salt

  • 250ml milk (you may need to alter this depending on the consistency that you enjoy)

  • 4 medjool dates, diced

  • 2 Tbsp boiling water

  • 45g protein powder

  • 2 squares of Lindt 70% dark chocolate, grated

  • 30ml sugar free maple syrup

  • 20g peanut butter

METHOD

  1. Place oats and milk in a small pan over a medium heat.

  2. Add salt and stir with a wooden spoon.

  3. Bring to a steady simmer for 5 minutes, stirring as often as you can to give you a smooth creamy porridge. If desired, adjust the consistency by adding a dash of milk or water.

  4. While the oats are cooking, soak two dates in the boiling water and mash with a fork. Just before the oats have finished cooking, stir through the date mix.

  5. Leave the mixture to cool slightly before mixing through the protein powder and diving between two bowls.

  6. Top with the chocolate, sugar free maple, peanut butter, and remaining dates.
