Prawn Paratha

Elevate your lunch game with our tantalising Prawn Paratha!

INGREDIENTS

  • 1 Tbsp olive oil

  • 1 cm ginger, grated

  • 1/2 red chilli, finely diced

  • 3 cloves of garlic, finely diced

  • 1/2 red onion - ¼ finely diced and ¼ thinly sliced

  • Handful of coriander, stem finely chopped

  • 400g prawns

  • 1 tsp of each Garam Masala, cumin, smoked paprika, curry powder, and oregano

  • 4 Tbsp water

  • Salt and pepper, to taste

  • 1 tomato, sliced

  • 2 paratha

Yoghurt Sauce:

  • 2 Tbsp natural yoghurt

  • Handful of coriander

  • 1 clove of garlic, diced

  • Juice from a wedge of lemon

  • Salt and pepper, to taste

METHOD

  1. Heat a pan over a medium heat. Add oil, ginger, chilli, garlic, diced red onion, and the coriander stem. Fry for one minute.

  2. Add prawns and spice mix. Fry for another two minutes.

  3. Add water and cook down to a paste. The prawns should be cooked through. Remove from heat and set aside.

  4. Add the yoghurt sauce ingredients into a blender. Blend until smooth and season with salt and pepper.

  5. Heat a new pan over a medium heat. Dry fry each paratha until golden and cooked through.

  6. To assemble, spread the yoghurt over the paratha. Then top with prawns, tomato, the sliced onion, and coriander.
