Satay Prawn Egg Noodles
Quick and tasty.
INGREDIENTS
100g dry egg noodles
1 Tbsp sesame oil
300g raw prawns, detailed and deveined
Salt and pepper
1 carrot, finely sliced
2 cups cabbage, finely sliced
1/4 red onion, finely sliced
1/4 cup coriander
Sauce:
30g peanut butter
1 Tbsp dark soy sauce
1 Tbsp fish sauce
1 tsp curry powder
1 tsp sugar
1 tsp rice vinegar
2 cloves garlic, finely diced
2 tsp grated ginger
1 tsp corn starch
1/2 tsp chilli flakes
1/4 cup boiling water
METHOD
Cook egg noodles as per packet instructions. Drain and set aside.
While the noodles are cooking, mix all of the sauce ingredients together. To prevent lumps, add the water last after everything is already combined. Set aside.
Heat half of the oil in a large pan over a medium heat. Season the prawns, then cook for 1-2 minutes on each side. Remove from pan.
Return the pan to the heat and add the remaining oil. Fry the garlic and onion for 1 minute.
Add the carrot, cabbage, and red onion. Stir fry for 1-2 minutes.
Add the noodles, sauce, and cooked prawns. Stir fry for 1-2 minutes.
Split between two bowls and serve topped with coriander.
