Chia Seed Pudding

INGREDIENTS

  • 300g berries

  • 50ml juice from orange

  • 1 Tbsp honey

  • 1/4 tsp fresh grated or ground ginger

  • 50ml milk

  • 90g chia seeds

  • 30ml sugar free maple syrup

  • 1 tsp vanilla essence

  • 60g protein powder

  • 300g Anchor Protein Plus yoghurt

  • 40g almonds, roughly chopped

METHOD

  1. To make the compote, place berries and juice from orange in a small saucepan and bring to a boil.

  2. Once boiling, reduce heat slightly and cook for 10 minutes or until slightly reduced. Mix through the honey and ginger. Set aside to cool.

  3. To make the pudding, mix the milk, chia seeds, maple, and vanilla essence together. Set aside.

  4. In a separate bowl, mix together yoghurt and protein powder. Set aside.

  5. To assemble, divide the compote between four jars or containers. Top with the chia seed mix, and then the yoghurt. Sprinkle with almonds. Refrigerate.

These can be kept in the fridge for up to five days.
