Prosciutto, Peach, & Mozzarella

A harmony of flavours.

INGREDIENTS

  • 200g mozzarella, broken into pieces

  • 80g prosciutto

  • 2 cups of rocket

  • 2 stone fruit, sliced

  • ¼ red onion, sliced

  • 1 tomato, sliced

  • ¼ c parsley, diced

  • 1 Tbsp olive oil

  • 1 Tbsp balsamic vinegar

  • Salt & pepper, to taste

METHOD

  1. Prepare salad ingredients.

  2. In a small bowl, mix olive oil with balsamic vinegar.

  3. Assemble the salad by dividing the ingredients between two serving bowls. Dress with the balsamic dressing. Season with salt and pepper.
