Prosciutto, Peach, & Mozzarella
A harmony of flavours.
INGREDIENTS
200g mozzarella, broken into pieces
80g prosciutto
2 cups of rocket
2 stone fruit, sliced
¼ red onion, sliced
1 tomato, sliced
¼ c parsley, diced
1 Tbsp olive oil
1 Tbsp balsamic vinegar
Salt & pepper, to taste
METHOD
Prepare salad ingredients.
In a small bowl, mix olive oil with balsamic vinegar.
Assemble the salad by dividing the ingredients between two serving bowls. Dress with the balsamic dressing. Season with salt and pepper.
