Jelly Tip Overnight Weet-bix

A delicious and nostalgic twist on the classic New Zealand treat.

This convenient and nutritious breakfast is easily customisable to suit your tastes. Stick with the Weet-Bix base, but feel free to get creative—swap out the protein powder flavour, try different fruits, or even go bold with green jelly! The possibilities are endless, so have fun experimenting!

INGREDIENTS

  • 2 Weet-bix

  • 10g chia seeds

  • 3-4 Tbsp boiling water

  • 150g Anchor Protein Plus yoghurt

  • 10g protein powder

  • 50g lite cream cheese

  • 100g raspberries

  • 1/8 of a pack of sugar free raspberry jelly

  • 1 square of Lindt dark chocolate

METHOD

  1. To make the base, crumbled with Weet-bix in a bowl. Add the chia seeds and boiling water and stir until well combined. Press the mixture into your serving dish to form the base.

  2. In the same bowl, mix the yoghurt, lite cream cheese, and protein powder until smooth and creamy. Spread this mixture evenly over the Weet-Bix base.

  3. Add the berries. If using from frozen, microwave for 45 seconds on high. Lightly mash the berries, then spread them over the yoghurt layer.

  4. Prepare the jelly according to the packet instructions. Pour just enough jelly over the berry layer to cover it, then refrigerate overnight to allow the jelly to set.

  5. Once the jelly has set, grate the dark chocolate over the top for a rich, finishing touch. Serve chilled and enjoy!

This recipe makes one serving, but it's perfect for meal prepping in bulk. Store individual portions in the fridge and enjoy a protein-packed breakfast throughout the week.
