Ochazuke

Ochazuke is a simple Japanese dish made by pouring green tea or dashi over cooked rice. A comforting dish to use up any leftovers you have in the fridge in the space of 10 minutes!

The protein and toppings can be interchanged as desired. Add veggies to the bowl or (as I do) on the side to make a balanced meal.

Get experimenting. The core of this dish is rice, and dashi. The rest, is up to you!

INGREDIENTS

  • 150g cooked rice, short grain rice works the best, ideally leftover (day old)

  • 150g chicken breast, diced

  • 1 spring onion, finely sliced

  • 5g dashi stock powder

  • 1 Tbsp soy sauce

  • 1 Tbsp mirin

  • 1 tsp olive oil

  • 1 tsp sesame oil

  • Shichimi togarashi - Japanese seven spice

METHOD

  1. Bring 1 cup of water to the boil and add in the dash stock, soy sauce, & mirin. Boil for 1-2 minutes or until the alcohol smell from the mirin has faded.

  2. Season the chicken with Japanese seven spice, mixing well (it is spicy, but feel free to swap out for any seasoning of your choice).

  3. Place a pan over medium-high heat. Add the olive oil and chicken to the pan cooking for 3-4 minutes on each side or until the chicken is cooked through. Remove from the heat, season with the sesame oil and toss to combine.

  4. Reheat rice in the microwave for 1 minute and place into a serving bowl. Top with the chicken and drizzle about half of the stock around the outside of the bowl. You add as much stock as you like, I prefer to have it almost covering the rice.

  5. Scatter over the spring onions and finish with more seven spice powder.

Nori, sesame seeds, wasabi or crispy/puffed rice also make great authentic toppings. Don’t confine yourself to the picture. Get adventurous.
