Fresh Slaw
Get your 5+ a day in one meal - or at least get very close!
INGREDIENTS
2 cups red cabbage, finely sliced
2 carrots, julienned
1 apple, julienned
½ cup coriander
1/2 cup mint
Dressing:
2 tsp sesame oil
2 Tbsp fish sauce
1 chili, minced
¼ cup lemon juice
2 tsp caster sugar
1 Tbsp olive oil
Salt, to taste
METHOD
In a small bowl, add the dressing ingredients and mix well.
In a separate bowl, combine the prepared salad ingredients. Right before serving toss the dressing through the salad.
Serves Two. Serve with your favourite protein. This recipe goes great with barbequed chicken!
