Banana, Maple, & Pecan

Sometimes you just have to break the fast and change the menu. After all, life is too short for boring breakfasts!

INGREDIENTS

  • 2 bananas

  • 500g Anchor Protein Yoghurt

  • 50g pecans

  • 1/2 tsp cinnamon

  • ¼ cup maple syrup

METHOD

  1. Preheat oven to grill 200 degrees. Line a tray with baking paper.

  2. Slice each banana lengthways (leaving skin on) and place on the tray flesh side up. Sprinkle with cinnamon and then drizzle with half of the measured maple syrup (set aside the other half for serving). Cook for about 10-15 minutes or until the bananas are golden and bubbling.

  3. While the bananas are cooking, in a small pan dry fry the pecans until golden.

  4. Divide the yoghurt between two plates. Top with banana, pecans, and any leftover maple syrup.

Serves Two.
