Satay Soba Noodles

A salad best served warm!

INGREDIENTS

  • 100g dry weight soba noodles

  • 1 carrot, julienned

  • 1/3 cucumber, thinly sliced

  • 2 spring onions, sliced

  • ½ cup coriander

Dressing:

  • 2 Tbsp peanut butter

  • 1 tsp sesame oil

  • ½ Tbsp rice vinegar

  • ½ Tbsp brown sugar

  • 1 Tbsp soy sauce

  • 2 cloves garlic, sliced

  • 2cm ginger, grated

  • 1 chilli, mined 

  • 2 Tbsp hot water

  • Salt, to taste

METHOD

  1. Put all dressing ingredients in a jar, except the salt, and shake until well combine. Taste, and season with salt if necessary. Set aside.

  2. Bring a large pot of water to the boil. Add noodles. Boil until just cooked (careful not to overcook otherwise you will end up with a soggy salad). Drain.

  3. Toss noodles, vegetables, and dressing together in a large bowl.

  4. Serve between two plates topped with your favourite protein.

Serves Two.

Serve with your favourite protein. This recipe goes great with barbequed chicken!
