Satay Soba Noodles
A salad best served warm!
INGREDIENTS
100g dry weight soba noodles
1 carrot, julienned
1/3 cucumber, thinly sliced
2 spring onions, sliced
½ cup coriander
Dressing:
2 Tbsp peanut butter
1 tsp sesame oil
½ Tbsp rice vinegar
½ Tbsp brown sugar
1 Tbsp soy sauce
2 cloves garlic, sliced
2cm ginger, grated
1 chilli, mined
2 Tbsp hot water
Salt, to taste
METHOD
Put all dressing ingredients in a jar, except the salt, and shake until well combine. Taste, and season with salt if necessary. Set aside.
Bring a large pot of water to the boil. Add noodles. Boil until just cooked (careful not to overcook otherwise you will end up with a soggy salad). Drain.
Toss noodles, vegetables, and dressing together in a large bowl.
Serve between two plates topped with your favourite protein.
Serves Two.
Serve with your favourite protein. This recipe goes great with barbequed chicken!
