Tuna and Potato

INGREDIENTS

  • 400g potato, cubed

  • 2 Tbsp olive oil

  • Salt & pepper

  • 1 cup beans, ends removed

  • 1/4 red onion, diced

  • 2 spring onion, green part only sliced

  • Handful parsley, chopped

  • 2 large tins of tuna in olive oil, drained

Dressing:

  • 60g lite mayo

  • 2 Tbsp capers

  • ½ lemon, juice & zest

  • Salt and pepper to taste

METHOD

  1. Pre-heat oven to 200-degree fan bake.

  2. In a large saucepan, cook potatoes in salted water on medium heat 8 minutes, until just tender.

  3. Drain and place on a baking tray. Toss with one tablespoon of olive oil and season with salt and pepper. Bake for 20-minutes or until golden.

  4. Heat the remaining olive oil on a pan over medium heat. Fry the beans for 2-3-minutes until the beans are cooked but still crunchy.

  5. While the beans are cooking, assemble the dressing.

  6. Toss the potato with the beans, tuna, onions, and parsley together. Then stir through the dressing.

  7. Divide between two bowls and serve.
