Toast & Coffee

For those mornings when toast is calling, but you’re not compromising on 30g of protein!

INGREDIENTS

  • 50g berries

  • 15g chia seeds

  • 1 slice of Freya’s low carb bread (or 40g grainy/rye loaf)

  • 25g peanut butter

  • 40g cottage cheese

  • 300ml trim milk

  • Shot of espresso (or 1-2 tsp of instant coffee mixed in 1-2 Tbsp of boiling water)

  • 5-6 ice cubes

METHOD

  1. In a microwave safe dish heat the berries in 30-sec bouts, stirring after each, until liquid and bubbling. Stir through the chia seeds. Set aside for at least 10 minutes or until the chia seeds have absorbed the liquid (this one can be made in bulk for the week!)

  2. While the berry mixture rests, toast your bread to your liking.

  3. Once the bread is toasted, spread the peanut butter, then the cottage cheese, followed by the berry-chia mixture on top.

  4. To make the iced coffee, to a glass add milk and ice cubes. Pour over your shot of espresso or coffee mixture.
