The Lazy Lasagne

This recipe encompasses the next of our Eating Strategies. These are strategies which help break down some of the barriers people have towards cooking:

Only buy foods that you enjoy eating.

While this might sound like an indulgence at first, it's actually a fundamental approach to fostering a more sustainable and enjoyable eating habit. This guideline goes beyond traditional dieting by promoting an approach to eating that values pleasure and satisfaction as key parts of a healthy diet.

At its core, this strategy acknowledges that:

  1. Enjoying what you eat leads to higher levels of satisfaction and often a reduction in unnecessary or overconsumption of food.

  2. Eating is about nourishment and pleasure, not punishment.

  3. When you buy foods that you enjoy, you're more likely to stick with the eating habits over the long term.

Implementing this principle involves many of our other Eating Strategies, specifically - ‘Sometimes you just need inspiration!’ and ‘Be open to trying, and even re-trying things you don’t think you like’ - ultimately it is about being mindful. Start your journey by tailoring your grocery list to include your favourite fruits, vegetables, and protein.

This recipe is all about my favourite foods!

INGREDIENTS

  • 500g beef mince

  • 1/2 onion, finely chopped

  • 3 cloves garlic, finely diced

  • ½ cup tomato paste

  • 3/4 cup red wine

  • 1 x 400g tin chopped tomatoes

  • 1 cup beef stock

  • 1 Tbsp balsamic vinegar

  • 1 Tbsp dried oregano

  • 2 sprigs of rosemary, finely chopped

  • 2 cups baby spinach (or any vegetables - mixed frozen work great!)

  • 200g dry weight pasta

Cheese Sauce:

  • 50g butter

  • 1/4 cup flour

  • 250ml trim milk

  • 50g grated cheese

METHOD

  1. Preheat your oven to 180°C.

  2. Brown minced meat in a hot pan, then set aside.

  3. Cook onions and garlic in the same pan until soft.

  4. Add back the minced meat along with tomato paste, wine, tomatoes, vinegar, and herbs. Simmer until thickened (about 25-30 minutes), adding spinach towards the end. Remove from heat.

  5. Cook pasta separately according to package instructions. Drain and set aside.

  6. Make cheese sauce by melting butter in a small pan over a medium-low heat. Add flour and cook for 2-4 minutes. Gradually whisking in milk until thickened. Stir in cheese until smooth.

  7. Combine cooked pasta with meat sauce, then transfer to an oven-proof dish.

  8. Pour cheese sauce over the top and bake until golden and bubbling (about 20-30 minutes).

  9. Serve with salad.
