Breakfast Croissant

You know how much I love a good croissant. Swapping the almonds for a high protein filling, put together in under 15mins. Who needs a Maccas breakfast anyway?

INGREDIENTS

  • 1 croissant

  • 2 eggs, whisked

  • 100g shaved ham

  • 1 Tbsp tomato chutney

  • 1/2 avocado

  • 1/2 tomato, finely diced

  • 1/4 small red onion, finely diced

METHOD

  1. Cut the croissant in half and turn oven to 180 deg on fan bake. Add the croissant from cold and heat through for 5-10mins.

  2. While croissant is heating up mash the avocado, 1/2 of the tomato, and red onion. Season with salt and pepper.

  3. Scramble the eggs in a non stick pan. I prefer hard and fast. Pan on high heat, drop the eggs in and continuously drag the eggs from the sides of the pan to the centre. Eggs should be cooked 3/4 of the way through. Remove from heat and set aside.

  4. Optional step: pan sear the ham for extra charred flavour.

  5. Remove the croissant from the oven. And assemble with all the ingredients. Start with the chutney, layer on the bottom of the croissant. Next add the egg, then ham and finely the mashed avocado.

  6. Sprinkle on the remainder of the tomato. Close the croissant and enjoy.

  7. It does get messy so wrap in baking paper and cut in half for a cleaner eating experience - I was too hungry.
