Sweet Omelette

Down to a fine art - a five-minute morning masterpiece.

INGREDIENTS

  • 120g berries

  • 10g butter

  • 3 whole eggs

  • 1/4 tsp vanilla essence

  • A crack of salt

  • 150g plain natural yoghurt

  • Sugar free maple syrup

METHOD

  1. To a medium sized pan, add butter and blueberries, and cook until bubbling (or the berries are soft).

  2. While these are cooking, whisk the eggs for 2-3 minutes. Then add vanilla essence.

  3. Pour over the berries, and cook until the top is firm. Season with salt.

  4. Fold, serve, and top with yoghurt and maple syrup.

Serves one.
