Sweet Omelette
Down to a fine art - a five-minute morning masterpiece.
INGREDIENTS
120g berries
10g butter
3 whole eggs
1/4 tsp vanilla essence
A crack of salt
150g plain natural yoghurt
Sugar free maple syrup
METHOD
To a medium sized pan, add butter and blueberries, and cook until bubbling (or the berries are soft).
While these are cooking, whisk the eggs for 2-3 minutes. Then add vanilla essence.
Pour over the berries, and cook until the top is firm. Season with salt.
Fold, serve, and top with yoghurt and maple syrup.
Serves one.
