Beef with Chimichurri

A versatile sauce most commonly used on grilled meat.

INGREDIENTS

  • 300g beef

  • ½ head of broccoli, cut into florets

  • 1 Tbsp olive oil

  • 1 clove garlic, sliced

  • Salt and pepper to taste

Chimichurri Sauce

  • 1/2 c coriander

  • 2 cloves garlic

  • ¼ c olive oil

  • ½ tsp salt

  • 2 Tbsp red wine vinegar

  • Pinch of chilli flakes

  • Pepper to taste

METHOD

  1. Pre-heat oven to 200g. Add broccoli, garlic, olive oil, and salt to a lined baking tray. Cook until broccoli is browning.

  2. While the broccoli is cooking, in a blender, add all of the ingredients for the chimichurri and blend until combined. Adjust to taste by using salt, chili, or vinegar. You can also finely dice everything rather than blend for a chunky sauce.

  3. Cook steak to your liking and serve.
