Sticky Beef with Stir Fried Noodles

Family friendly beef noodles

That feeling when you finally graduate from a 2 minute packet..

INGREDIENTS

  • 80g dry weight egg noodles

  • 1 small onion, finely diced

  • 1/2 tsp chilli flakes

  • 3 cloves of garlic, finely diced

  • 1 Tbsp garlic, minced or grated

  • 1 Tbsp sesame oil

  • 300g beef mince

  • 3 spring onions, diced

  • 2 eggs

  • 2 tsp sesame seeds

Sauce:

  • 3 Tbsp soy sauce

  • 3 Tbsp oyster sauce

  • 2 Tbsp mirin

  • 3 tsp hoisin

Serves two.

METHOD

  1. Prepare noodles as per packet instructions. Set aside and reserve one cup of the cooking water.

  2. Mix the sauce ingredients together and set aside.

  3. On a medium heat, sauté the onions, garlic, ginger, and chili in the oil until the onion is clear.

  4. Add the beef mince and cook until brown (or with minimal pink).

  5. Pour over sauce and cook until caramelised.

  6. Add noodles and the reserved water to the pan and mix to combine.

  7. While this is cooking, in a separate pan fry your eggs.

  8. Serve the mince and noodles topped with eggs, sesame seeds and spring onion.
