Pulled Beef
A cooks meal prep hack - that one dish that can be made into multiple meals..
INGREDIENTS
1kg beef shin
1 whole onion, finely sliced
5 cloves garlic, minced
Beef stock, enough to cover the meat
2 sprigs of rosemary
2 tsp cumin
2 tsp ground coriander
2 tsp smoked paprika
Salt & pepper
METHOD
Place a pan over high heat.
Rub the beef with the spice mixture and sear all sides in the pan.
Remove the beef from the pan and place into a slow cooker along with the rest of the ingredients.
Cook on high for 4 hours or on low for 8 hours.
Once cooked, remove the beef and shred the meat.
Tip the juice into a large pan and reduce by half or until slightly thicker.
Combine the meat and gravy into a container and keep ready for quick meals throughout the week.
