Low sugar pulled beef

A cooks meal prep hack - that one dish that can be made into multiple meals..

INGREDIENTS

  • 1kg beef shin 

  • 1 whole onion, finely sliced

  • 5 cloves garlic, minced

  • Beef stock, enough to cover the meat

  • 2 sprigs of rosemary

  • 2 tsp cumin

  • 2 tsp ground coriander

  • 2 tsp smoked paprika

  • Salt & pepper

METHOD

  1. Place a pan over high heat.

  2. Rub the beef with the spice mixture and sear all sides in the pan.

  3. Remove the beef from the pan and place into a slow cooker along with the rest of the ingredients.

  4. Cook on high for 4 hours or on low for 8 hours.

  5. Once cooked, remove the beef and shred the meat.

  6. Tip the juice into a large pan and reduce by half or until slightly thicker.

  7. Combine the meat and gravy into a container and keep ready for quick meals throughout the week.
