Pancakes with Fruit

Not too bad for a protein pancake..

INGREDIENTS

  • 250g low fat cottage cheese

  • 2 whole eggs

  • 1/2 tsp vanilla essence

  • 2 Tbsp honey

  • 1/2 tsp baking powder

  • 1/2 cup flour

  • 2 Tbsp neutral cooking oil

  • 200g De Winkle natural yoghurt

  • 1 banana

  • 200g strawberries

  • Sugar-free maple syrup, for serving

METHOD

  1. Combine the first six ingredients together, mixing with a whisk after each ingredient added. This is your pancake batter.

  2. Heat a medium size pan over a low heat. You will need to cook these in batches so add part of the oil. Divide the mixture and cook until golden or cooked through.

  3. Divide the pancakes between two plates and top each portion with yoghurt, fruit, and sugar-free maple syrup.

Serves Two.
