Jollof Rice with Beef

A West African classic known for its rich flavours and vibrant colors.

INGREDIENTS

  • 300g beef steak, thinly sliced

  • 1 tsp curry powder

  • Salt & pepper, to taste

  • 1 Tbsp olive oil

  • 1 capsicum, deseeded

  • 3 large tomatoes, roughly chopped

  • 2-3 jalapenos

  • 1 white onion, 1/2 roughly chopped and 1/2 sliced (separate)

  • 1/4 cup of water

  • 1 Tbsp olive oil

  • 2 Tbsp tomato paste

  • 3 cloves garlic, sliced

  • 1/2 Tbsp ginger, minced

  • 1/2 Tbsp curry powder

  • 1/2 Tbsp thyme

  • 1/2 tsp salt

  • 1 cup stock

  • 100g dry weight rice

METHOD

  1. Season the thinly sliced beef steak with 1 tsp curry powder, salt, and pepper.

  2. Heat 1 Tbsp olive oil in a large pan over high heat. Add the beef and sear quickly until just browned, then remove from the pan and set aside.

  3. In the same pan, add another 1 Tbsp of olive oil. Add the roughly chopped half of the white onion, garlic, ginger, curry powder, thyme, and salt. Cook until the onions are soft and fragrant.

  4. Add the chopped capsicum, tomatoes, and jalapenos to the pan. Cook until the tomatoes start to break down and the mixture becomes saucy, about 5-7 minutes.

  5. Add the tomato paste and stir well to combine. Cook for another 2-3 minutes.

  6. Transfer the cooked mixture to a blender or use an immersion blender to blend until smooth. Add 1/4 cup of water to help blend if necessary.

  7. Return the blended sauce to the pan. Add the remaining sliced onions and cook for another 2-3 minutes.

  8. Add the rice and stir to coat the rice with the sauce.

  9. Pour in the stock and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.

  10. Once the rice is cooked, stir in the cooked beef slices. Let it cook for another 2-3 minutes to ensure the beef is heated through.

  11. Adjust seasoning with salt and pepper if needed, and serve.
