Garlic Prawns

INGREDIENTS

  • 500g prawns (shelled and deveined)

  • 3 cloves garlic (minced)

  • 5 sprigs of fresh coriander (finely chopped)

  • ¼ tsp smoked paprika

  • Chili flakes to taste

  • ½ lemon, juice

  • 2 Tbsp olive oil

  • Salt & pepper

METHOD

  1. Combine all ingredients into a large bowl and toss to combine. Allow to sit in the fridge for at least 30mins prior to cooking.

  2. Heat pan or BBQ to medium-high.

  3. Add prawns one by one and cook for 2-3mins on one side.

  4. Flip and cook for a further 2-3 minutes or until prawns are cooked through.

  5. Add a couple of Tbsp of water or stock to the remaining sauce mixture, stir, and then add to the pan.

  6. Simmer for a further minute or until the sauce thickens to a glossy texture.

  7. Toss to combine and serve.

Serves Two.

Delicious served in a wrap, on rice, or over a slaw!
