Greek-Inspired Grilled Chicken

Chicken cooked on the grill marinated in the bold flavors of Greece.

INGREDIENTS

  • 250g chicken breast, sliced length ways

  • 1/2 cucumber, diced

  • 2 tomatoes, diced

  • 1/2 cup parsley, roughly chopped

  • 1/8 tsp of each salt and pepper

  • Juice from half of a lemon

  • 2x Giannis Sourdough pita pocket

  • 80g Obella Tzatsiki

  • Lemon wedges, to serve

Marinade:

  • 3 cloves of garlic, finely diced

  • 60g Anchor Protein plus yoghurt

  • 3 Tbsp lemon juice

  • 1/2 Tbsp olive oil

  • 1 Tbsp dried oregano

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 1/4 tsp pepper

METHOD

  1. In a bowl, combine the marinade ingredients. Stir well to mix. Add the chicken breast, making sure they are well coated. Cover and refrigerate for at least four hours, or overnight for best flavor.

  2. Remove the chicken from the fridge and preheat oven or BBQ to 200 degrees while preparing the salad ingredients.

  3. To make the salad, combine the cucumber, tomato, parsley, salt, pepper, and lemon juice in a bowl. Mix together and set aside.

  4. Grill chicken for 5-7mins per side or until chicken is cooked through. Transfer the cooked chicken to a cutting board and let it rest for 5 minutes before slicing.

  5. While the chicken rests, slice the pita pockets in half. Toast them in a dry, hot pan until golden and crispy, or use a toaster or oven.

  6. Divide the sliced chicken, salad, and tzatziki between the two toasted pita halves. Serve with lemon wedges on the side.
