Frittata with Feta
An easy protein hit.
INREDIENTS
6 whole eggs
125ml milk
Salt and pepper, to season
300g kumara, cooked and cut into cubes
100g fat reduced feta, crumbled
2 cups of mixed vegetables - we have used spinach, capsicum, onion and tomato
METHOD
Preheat the oven to 180 degrees. Line a loaf pan with baking paper.
In a bowl, combine eggs and milk. Whisk together. Then season with salt and pepper.
Add vegetables to the loaf pan and then pour over the egg mixture.
Bake for 45 minutes or until the top is golden and the egg is cooked through.
Tip - make holes in the kumara with a fork and cook whole in the microwave with the skin on. When cool, cut into cubes.
