Chicken Cashew

The creamy, crunchy cashews are the hero in this dish.

INGREDIENTS

  • 2 Tbsp oil

  • 300g raw chicken breast, sliced

  • 2 cloves of garlic, minced

  • ½ cup cashews

  • 1 cup of shredded cabbage

  • 1 carrot, chopped into pieces

  • 2-3cm ginger, sliced

Sauce

  • 1 Tbsp of each dark soy, light soy, fish sauce, and mirin

  • ½ Tbsp sesame oil

METHOD

  1. Combine the sauce ingredients in a small bowl.

  2. In a pan, heat half of the oil on a medium high heat.

  3. Sear the chicken on both sides and then remove from the pan. The chicken should be about three quarters of the way cooked through.

  4. Add the remaining oil to the pan and stir fry ginger and garlic.

  5. Then add the vegetables. Stir fry for one to two minutes.

  6. Add the chicken back to the pan, stir fry for another minute.

  7. Then add the sauce.

  8. Reduce the sauce until the chicken is cooked through.

  9. Add the cashews and mix through.

  10. Garnish with sliced ginger.

Serves two.
