Chicken Basil Stir Fry

Firey, garlicy, herbaceous. A great addition to the staple chicken & rice!

INGREDIENTS

  • 150g chicken breast, diced (small pieces)

  • 10 green beans trimmed and halved

  • 3 cloves of garlicked, minced

  • Fresh chilli to your heat preference

  • Handful of fresh basil

  • 1 Tbsp oil

Sauce: mix together

  • 1 Tbsp oyster sauce

  • 1 tsp light soy sauce

  • 1 tsp fish sauce

  • ½ tsp dark soy sauce

METHOD

  1. Place a wok over high heat and bring to smoke point.

  2. Place oil in the wok and stir fry the chilli and garlic.

  3. Toss vigorously being careful not the burn and then add the chicken.

  4. Stir Fry for an additional 30sec-1min or until the chicken is nearly cooked through. 

  5. Add the beans and continue to stir fry for an additional minute. Keep in one place to add some char on the bottom of the beans/chicken.

  6. Add the sauce around the wok and toss to combine. 

  7. Once chicken has cooked through turn off the heat and add the basil. Mix through and serve.

  8. Best served over a bed of hot rice.

When cooking at home, it is best to keep stir fry to 1-2 portions per cook to maintain a high heat on the wok throughout the cooking. Otherwise, you will get an unfavourable stir-boil.
