“Mixed rice” with meat and vegetables.

INGREDIENTS

  • 120g cooked rice

  • 150g Gochujang BBQ chicken

  • 50g kimchi

  • 50g thinly sliced cabbage/lettuce

  • 1 spring onion, green part only, thinly sliced

  • Nori

  • Spinach Gomae

Spinach Gomae (side dish - makes 2-3 servings)

  • 1 tbsp Soy sauce

  • 1 tbsp Sesame seeds

  • 1 tsp Sugar

  • 1 bunch Japanese spinach (100g)

METHOD

  1. For the spinach side dish cut the base off the spinach and place into a pot of boiling salted water. 

  2. Blanch the spinach for 2-3 minutes then remove from the heat and soak in an ice bath. 

  3. To make the dressing, grind sesame seeds into a coarse powder (use a pestle & mortar or the butt of a knife and a bowl).

  4. Mix in the soy sauce and sugar, stirring until the sugar dissolves. 

  5. Rinse out the spinach removing excess water then place into a mixing bowl. 

  6. Pour over the sauce and toss to combine.

  7. For the bibimbap - reheat rice in the microwave or cook as per packet instructions. 

  8. Get all the remaining ingredients out of the fridge and reheat the chicken - either in a microwave or in a fry pan. 

  9. Place rice in a bowl, then top with chicken, spinach, kimchi, & slaw. 

  10. Sprinkle over the spring onion and place the nori snack sheets to one side of the bowl. 

  11. Mix well and enjoy!

Place a tsp of gochujang chilli paste in the middle of the bowl before mixing if you want an extra spicy kick.
