Yudofu (Hot Tofu)

Simple, comforting, hot pot style tofu.

INGREDIENTS

  • 500g firm tofu

  • 1 sachet dash stock

  • 3 tbsp soy sauce

  • 100g (dry) short grain rice

OPTIONAL TOPPINGS

  • Thinly sliced green onion

  • Roasted sesame seeds

  • Japanese chilli power (sichimi togarashi)

  • Grated ginger

METHOD

  1. Wash, and cook rice as per packet instructions.

  2. Add 1L of water to a pot and the dash stock sachet (5g). Place over medium-high heat and bring to a simmer.

  3. Add 1 tbsp of soy and the tofu pieces to the stock. Cook for 7-10 minutes or until tofu is soft and heated through.

  4. Removed tofu from the pot and place into a serving bowl. Ladle over some of the stock and season with 1 tbsp of soy for each serving.

  5. Garnish with any toppings of your choice and serve alongside rice and vegetables of your choice.

This dish goes great with various vegetable side dishes. Try different pickles, kimchi, and seasoned asian greens. Pictured is a bean sprout salad and a Japanese spinach salad.
