Soba Noodle & Edamame Bean Salad

Delicate soba noodles and vibrant edamame beans unite in a harmonious culinary dance.

INGREDIENTS

  • 160g dry weight soba noodles

  • Spray oil

  • 1 clove garlic, diced

  • 2cm ginger, thinly sliced

  • 1 handful coriander, stalks diced and leaves kept for garnish

  • 1 spring onion, finely slice keeping white and green parts separated

  • 200g edamame beans

  • 50g canned black beans, drained and washed

  • Salt and pepper, to taste

  • ½ cucumber, julienned

  • ½ red chili, sliced

  • 50g peanuts

Sauce

  • 1 clove garlic, grated

  • 2cm ginger, grated

  • 2 Tbsp soy sauce

  • Juice of a ¼ lime

  • 1 tsp sugar free maple

METHOD

1. Prepare soba noodles as per packet instructions. Drain and set aside.

2. In a small bowl mix the dressing ingredients, then set aside.

3. Heat a frying pan over a medium-high heat and spray with oil. Add garlic, ginger, white part of the spring onion, and the diced coriander stalks. Stir fry for two minutes or until aromatic.

4. Add beans – both edamame and black beans, and then season with salt and pepper. Stir fry for two minutes.

5. Remove from heat, add noodles, and mix thoroughly.

6. Add cucumber, coriander leaves, chilli, peanuts, and the green part of the spring onion. Toss together and serve drizzled with dressing.
