Tuna & Kimchi Power Bowl
Not all superheroes wear capes.
INGREDIENTS
40g dry weight rice
95g tin of tuna in olive oil (or any flavour that you enjoy!)
1 whole egg
2 Tbsp kimchi
3 gherkins, chopped into pieces
Handful of sprouts
Handful of coriander
2 Tbsp soy sauce
METHOD
1. Cook rice as per packet instructions
2. While the rice is cooking, heat a pan to a medium heat and fry the egg
3. Add rice to the base of your bowl. Then top with tuna, egg, and vegetables
4. Season with salt and pepper, and sprinkle over the soy sauce
