Mazemen
Mazemen or “mixed noodles” is a soup-less ramen dish, perfect for a warmer summers day!
INGREDIENTS
150g cooked chicken, shredded
1/2 cucumber, finely sliced into matchsticks
1 head of baby bok choy, roughly chopped
1 spring onion, fine sliced
2 whole eggs, 7mins boiled
160g (dry) soba noodles
For the sauce:
2 Tbsp soy sauce
1 Tbsp rice vinegar
2 tsp sesame oil
1 clove garlic, minced
1 Tbsp gochujang (spicy) OR 1 Tbsp miso paste (non spicy)
METHOD
Place a pot with 2-3L water over high heat and bring to the boil.
Place the eggs in the boiling water for 7mins. Use this time to cut all the vegetables and shred the chicken if you need to do so.
With 2mins to go add the bok choy and cook for the remaining time. Once time is up, transfer the eggs and the bok choy to a bowl filled with cold/icy water.
In the same pot you cooked the eggs in, bring the water back to a boil, and then add the soba noodles, cooking as per packet instructions. If you want the noodles warm, cook to al dente as they will continue to cook and soften after removing from the water.
Meanwhile prepare all sauce by mixing all ingredients together and then diving between two bowls.
Add the noodles to the bowls on top of the sauce, then top with the chicken, vegetables, and egg.
Mix well and enjoy.
In Japanese culture it’s polite to slurp as you eat the noodles. A show to the chef that he/she has done a good job and as a way to not burn your mouth with hot noodles.
