Harissa Beef Wraps

Another freezer favourite - freeze the leftover meatballs before cooking for another night!

INGREDIENTS

  • 200g beef mince

  • 1/2 can of lentils, drained and washed

  • 2 cloves of garlic, diced

  • 1/2 lemon, rind and juice

  • 1 bunch of parsley

  • 2 tsp harissa

  • Salt and pepper, to taste

  • ½ apple, julienned

  • ¼ red cabbage, finely sliced

  • 1/4 red onion, finely sliced

  • Salt and pepper, to taste

  • 100g natural yoghurt

  • 1 Tbsp olive oil

  • 2 wholemeal wraps

METHOD

1. In a food processor, blend the beef, lentils, garlic, lemon rind, and half the parsley until just combined.

2. Add harissa and mix through. Season with salt and pepper. Roll into small balls.

3. Heat a frying pan to a medium heat, cook meatballs until cooked through and brown.

4. While the balls are cooking, prepare the slaw. In a bowl, mix the apple, cabbage, onion, yoghurt, and olive oil. Season to taste.

5. Heat a clean frying pan to a medium heat. Dry fry each of the wraps to lightly toast.

6. Assemble by adding the slaw, additional parsley, and the meatballs.
