An easy protein boost to your morning avocado toast.

INGREDIENTS

  • 200g sourdough

  • 100g edamame 

  • 1 avocado

  • 4-5 fresh basil leaves

  • Juice from half a lemon

  • 6 whole eggs

METHOD

  1. Bring one pot of water to a boil - large enough for the eggs. 

  2. Add edamame beans to the boiling water and cook for 3-4 minutes. Remove from the water and chill in cold water.

  3. Remove cooked edamame beans from the shell and place into a small bowl or directly into a grinder/blender (A spice grinder works great but any small handheld blender will do). Season with salt & pepper and blend together with the basil and lemon juice. If you don’t have a blender you can mash with a fork instead. 

  4. Transfer to a bowl and smash together with the avocado. Season to taste and set aside. 

  5. Place the eggs into boiling water and cook for 7-8 mins (from cold), 6-7mins for room temp eggs. Remove and place into an ice bath before peeling. 

  6. Toast the sour dough and spread over the avocado mixture. Slice eggs in half and place on top or to the side
