Beef & Broccoli Stir Fry
Short on time? This staple stir fry dish that can be whipped together in under 20mins.
INGREDIENTS
120g cooked rice
130g premium beef mince
100g broccoli, finely chopped
1 green onion, finely chopped
3 cloves of garlic, minced
1/3 cucumber, julienned
2 tsp olive oil
Sesame seeds (enough to sprinkle over at the end)
SAUCE
15mls soy sauce
15mls oyster sauce
15mls cooking sake
15mls mirin
1 tsp sesame oil
1 tsp corn starch
METHOD
Place a pan or a wok over high heat. Add half of the olive oil and the mince and cook for 3-4 minutes on one side, pressing the mince down into the pan to help create a crust. Flip the mince and begin to break apart. Continue cooking for a further 3-4 minutes or until the mince is 3/4 cooked through then remove from the pan.
Wipe the pan clean, then place the pan back over medium high heat. Add the remaining oil along with the garlic and the green part of the spring onion. Stir fry for 1-2 minutes.
Add the broccoli and continue to stir fry for an additional 1-2minutes.
Add the mince back to the pan and toss to combine. Meanwhile mix all the sauce ingredients together with 1-2 Tbsp of warm water.
Add all the sauce ingredients and stir fry for 30-45seconds or until sauce thickens. Remove from the heat.
To serve, add rice to a bowl. Place the mince over the top and garnish with sesame seeds, the green part of the spring onion, and julienned cucumber.

Cooking tips:
Cook the mince first to get a char on the outside. This will keep it crispy when you bring the dish together with the sauce.
This recipe is best cooked in batches of 1-2 servings at a time. Overloading the pan will drop the heat cause you to simmer/boil the ingredients not fry.
