Bahn Mi

Fresh and tangy.

INGREDIENTS

  • 2 mini baguettes (about 9 inches each)

  • 1 carrot, julienned

  • 1 c coriander

  • 1 spring onion, finely sliced

  • ¼ red onion, finely sliced

  • 300g cooked shredded chicken Need to link in chicken recipe

  • 30g pate

Dressing:

  • 1 Tbsp fish sauce

  • Juice of 1 lime

  • 1 cm ginger, julienned

  • ½ small red chili, finely sliced

  • 1 tsp sesame oil

  • 1 tsp sugar

METHOD

1. Mix dressing ingredients together.

2. Cut the baguette in half. Spread the pate over one side of the bread. Then top with chicken and salad ingredients. Top with the dressing.

3. Serve immediately.
